I was wondering, if I use an SD card to copy all the data from a Wii to another Wii, will I use the data on the original console?

That’s not how it works. You will need to perform a system transfer via system settings, and both of your Wii consoles will need to be in close proximity to one another (separate but nearby rooms should be fine) in order for the transfer to take place.

You cannot simply copy/paste between SD cards as your downloaded software is secured so that it can only be read by the console that originally purchased/downloaded it.
